How this started
In the spring of 2016 we opened a single shop of about 180 square metres on a side street in Vilnius. The plan was modest: sell the food we actually cooked at home, and keep the shelves short enough that we could explain every item on them. The first week we sold coffee, bread, four kinds of cheese and a freezer of dumplings.
What worked was not the size of the range but the fact that someone behind the counter had tasted everything. Customers began asking us to order things for them, and by 2018 the back room had turned into a small warehouse. We opened a second Vilnius store that year, Kaunas in 2021, and Klaipeda in 2023. Online ordering came in 2020, out of necessity, and stayed because it turned out that a weekly grocery list is exactly the kind of thing people would rather not carry.
Narrow and deep
A large supermarket carries thirty kinds of tinned tomatoes. We carry four, and we can tell you which one to use for a sauce and which one to leave alone. That is the whole idea behind the way we buy: fewer lines, each one chosen on purpose, and no line kept on the shelf simply because a supplier pays for the space.
The eight aisles we run online are Bakery & bread, Vegetables, Fresh fruits, Meat products, Dairy & eggs, Beverages, Sauces & ketchup and the one themed shelf we allow ourselves, Meet Italian dinner. Every one of them is reviewed twice a year, and lines that nobody reorders come off.
Four of those aisles are cut and weighed at the counter rather than pre-packed — vegetables, fruit, the meat counter and the cheese cut from the wheel. That is how a shop floor works, and there is no good reason an online basket should not work the same way.
Where the food comes from
- Bread, dairy and eggs come from Lithuanian producers, most of them within 150 km of a store.
- Fruit and vegetables are bought seasonally: local while the season lasts, imported only when it does not.
- Cheese, cured meat and pantry goods come from importers we have worked with for years, which is how we can put a producer name on almost every label.
- Produce and meat are bought direct from the grower or the butcher wherever the volume allows it, so the chain has one fewer stop.
Food we do not sell
Roughly two percent of what we buy never reaches a customer, and we would like that number lower. Short-dated chilled and bakery goods are marked down in store from 18:00. What does not sell goes to two food banks we work with in Vilnius and Kaunas. Fruit and vegetables past their sale point but still sound go to a composting scheme rather than a bin.
We would rather sell a loaf at half price at seven in the evening than throw a whole tray away at nine.
The people
There are 61 of us: 44 in the four stores, 11 in the picking and delivery team, and six in the office above the Savanoriu store. Our drivers are employed by us rather than subcontracted, which is a slightly more expensive way to run a delivery service and the reason the same driver usually turns up at the same address.

Ozo Market
StoreOur largest store, with 180 free parking spaces and the deepest meat and cheese counters in the chain. Delivery vans load here, so the shelves are refilled twice a day.

StoreA compact city-centre shop for the walk home: fresh produce, bread, dairy and ready meals, plus a six-seat coffee bar by the door. No car park, and closed on Sundays.

Taikos Collection Point
