Because the poppy seed is ground, the crumb is dark all the way through instead of speckled, and it keeps four days without drying — the sour cream does that. Serve it at room temperature, not fridge-cold, or the butter in it firms up and the flavour flattens. It also freezes well by the slice.

Very good but very heavy — a small slice is plenty. Straight from the fridge it was almost tasteless; the note about serving it at room temperature is not optional.
