Coffee is at its best from four days to about five weeks after roasting: before that it is still degassing and the shot channels, after that the aromatics have gone. That is why the roast date matters more than the origin. Buy the size you will finish within a month and keep the bag closed at room temperature — the freezer is fine for long storage, the fridge never is.
