Saffron Street Wholegrain Mustard 200 g
The heat in mustard comes from an enzyme reaction that starts when the seed meets liquid and fades over months, which is why an old jar tastes merely sour. Cold liquid keeps the heat, hot liquid kills it — so stir mustard into a sauce at the end, off the heat, not at the start. Two teaspoons will also hold a vinaigrette together without any egg.
