Saffron Street builds one recipe per idea and then leaves it alone. The ketchup is made from tomato paste rather than water and starch, the mustard seeds are cracked instead of milled, the chipotle sauce is fire-roasted before it is milled, and the passata is sieved and bottled the day the tomatoes are picked.
Every label carries the sugar and salt per hundred grams on the front, because on a sauce shelf that is the number that decides the purchase. A simple cooking note goes on the back — a jar is only useful if you know what to do with it on a Tuesday.
