Goat cheese firms as it ages and this one is deliberately caught young, so it spreads at room temperature and holds its shape under a grill for about four minutes. A drizzle of honey or good olive oil and a crack of pepper is all it needs. Once open, wrap the cut face and use it within four days — a fresh cheese has no rind protecting the inside.
