Casa Lombardi Aged Gouda-Style Wedge
Those crunchy specks in an old gouda are tyrosine crystals, and they are the best single sign that a cheese was aged rather than dyed and dated. Wrap it in waxed paper, not clingfilm — a hard cheese needs to breathe, and plastic makes the rind sweat and go ammoniac. It grates, melts and slices, which is unusual for a cheese this old.

Loose produce is picked into your order on the morning it leaves us, and meat and counter cheese are cut the same day. Everything travels chilled in insulated totes.

Do not wash produce before storing it — damp skin is what starts the rot. Wash it when you cook it.
Order before 14:00 for next-day delivery, or pick a two-hour evening slot. Collection from any of our stores is free and usually ready within two hours.

Excellent cheese, but the wedge I received was cut quite thin and long, which makes it awkward to slice for a board. Taste was flawless.
Grates over pasta better than a parmesan at this price. I now order 0.3 kg with every Italian dinner order.
