Casa Lombardi
Casa Lombardi is a deli house before it is a label: the salami is air-dried for eleven weeks and sliced to order, the gouda-style wheels are turned by hand for eighteen months, and the pasta is extruded through bronze dies and dried slowly so sauce actually clings to it.
The olive oil carries a harvest year rather than just a best-before, because an extra virgin oil is at its best in the eighteen months after picking and nobody should have to guess. Counter cheese and cured meat are cut and weighed to your order, priced by the kilogram.
