Fresh garlic keeps developing in the jar, so this is noticeably stronger in week three than on day one — useful to know before you spoon it over a delicate salad. It is an emulsion, so keep it cold and never freeze it; freezing splits mayonnaise permanently and no amount of whisking brings it back. Once open, three weeks in the fridge.

Thick, pale and unmistakably garlicky. The warning that it gets stronger in the jar over weeks is accurate, so use it early for delicate things.

Too garlicky for me by week two — genuinely strong. Great if that is what you want, but I could not use it on a salad.
