Test an older egg in water — it lies flat when fresh, tips up as it ages and floats when it is done. Room-temperature eggs whip to nearly twice the volume of cold ones, which matters for anything baked.

Yolks are properly orange and they were laid three days before delivery, which the box confirms. Not one cracked in transit.
